The six processing steps are:
- Dough preparation using only durum wheat, water, yeast and sea salt, followed by a first rise.
- Shaping, rolling and subsequent second rise.
- High-temperature cooking to puff up the dough and divide it into two extremely thin sheets that are split apart.
- ‘Carasatura’, the resulting sheets are toasted further to obtain the proper golden colour and typical crispness.
- Manual spraying with olive oil once cold.
- Cutting and packaging in the formats specified below.
