The six processing steps are:

  1. Dough preparation using only durum wheat, water, yeast and sea salt, followed by a first rise.
  2. Shaping, rolling and subsequent second rise.
  3. High-temperature cooking to puff up the dough and divide it into two extremely thin sheets that are split apart.
  4. ‘Carasatura’, the resulting sheets are toasted further to obtain the proper golden colour and typical crispness.
  5. Manual spraying with olive oil once cold.
  6. Cutting and packaging in the formats specified below.
